pomogranate shrikand


INGREDIENTS

Greek-style yoghurt-1cup
milk- 1/4cup
saffron threads-½ tsp
icing sugar, or to taste
cardamom powder-1/4tsp
chopped unsalted pistachios-2 tbsp
flaked or sliced almonds-2 tbsp
pomegranate seeds

Method

1. Line a large sieve with a double layer of paper kitchen roll. Place a bowl under the sieve and pour in the yoghurt. Refrigerate for as long as possible to allow the liquid to drain off the yoghurt. This will take a minimum of 5-6 hours.

2. Heat a little milk in a small pan. Place two teaspoons of the milk into a small bowl and crumble the saffron strands into it (the rest of the milk can be used in another dish). Allow the saffron to infuse the milk for about ten minutes using the back of a spoon to crush the saffron further into the milk.

3. Remove the yoghurt from the fridge (the liquid in the bowl below can be discarded). Sift the sugar into the thickened yoghurt, then add the saffron milk and ground cardamom. Cover and chill in the fridge.

4. To serve, divide the yoghurt among four bowls and garnish with the nuts and pomegranate seeds.

Rasayana



Ingredients:
Ripe bananas – 5 to 6
Grated coconut – 2 tbsp
Jaggery powder – 2 tbsp
Sugar/ honey – 1 tsp
Cardamom powder – ¼ tsp
Ghee (melted) – 1tsp

Method:
1. Cut bananas in to roundels
2. Add all the ingredients with bananas and mix well.

Melon Shake



Ingredients:
Melon (cubed) – 1 cup
Milk – 2 cups
Sugar to taste
Cardamom powder – ¼ tsp

Method:
Blend everything in a blender, serve chill.

Chocolate Banana Shake



Ingredients:
Banana – 2
Chocolate sauce – 2 tbsp
Milk – 2 tbsp
Sugar – 2 tbsp

Method:
1. First blend the banana, chocolate sauce and sugar into smooth consistency
2. Add milk and blend well
3. Serve chilled

DATE'S SHAKE





Ingredients:


Dates-12,pitted


Milk-3cups


Vanilla icecream-2scoops


Vanilla essence-3drops


Sugar-2tsp(optional)


Method:


Blend everything in a blender.Serve chilled in glasses.

Blueberry Cake







Ingredients:
100gms-Plainflour
100gms-Castersugar
100gms-Butter
2-Eggs
3-4-Drops of vanilla essence
1tsp-Baking powder
1cup-blueberries

Method:
1.In a bowl, cream the butter and sugar with blender.
2.Add eggs one by one and mix well.Add vanilla essence.
3.Add flour in two parts,blend well.Add blueberries and mix gently with wooden spoon.
4.Transfer the batter to greased loaf tin.
5.Bake in a preheated oven for 50-60 minutes at 170'C-180'C.
